This is a recipe for one bowl of Hog Wash
- 1/4 cup seasoned rice vinegar
- 1/4 cup unseasoned rice vinegar
- 1 large shallot, peeled and minced
- 1 large jalapeño pepper, seeded and minced
- 1/2 bunch cilantro, finely chopped
- Juice of 1 lime
What’s with the whole vinegar thing? It’s simple – using a 50-50 blend of unseasoned rice vinegar and seasoned rice vinegar gives us the perfect balance of acidity and sweetness. At the same time, seasoned rice vinegar has sugar and salt added, in just the perfect amount. Combine all ingredients in a medium-sized bowl. Stir the How Wash well enough before serving. Serve in a small or a medium sized bowl alongside some freshly shucked Williams Wharf oysters. Add the vinegar and lime juice blend right before serving.
It’s better to use Hog Wash the same day it was made. If you can’t finish it in a day or you plan on making it in advance, keep the sauce refrigerated.
